Pithas are cakes or breads common in the eastern and north eastern states. Traditionally made with soaking and grinding raw rice, however, over the years the process has been made simpler by using rice flour. This recipe comes from Assam
Recipe:
Ingredients:
250 gms rice flour
1/4 cup sugar
Pinch of salt
2 cups grated coconut
Handful of sticky rice flour
Water as needed
Method:
Combine rice flour,sugar and salt in a bowl and mix well.
Slowly add water and mix until the mixture as granular.
Place some water in a kettle and bring to a boil.
In the mouth of the kettle place a piece of muslin cloth
Layer rice mixture on the muslin, then add coconut in middle, another layer of rice mixture and repeat this layering two times
Cover with the muslin cloth and steam till done- about 8-10 minutes.Gently remove and turn the cake over onto a serving plate.
Serve with fresh cream and Liquid Gur/jaggery.
