One dish which I loved as kid was Methi Malai Matar. My mom would make it often since this was the only way I would get some greens and like all moms, she liked a chubby baby. Here is Aman Kahlon’s recipe which uses Chicken instead of Matar (Peas) and it is a great dish indeed.
Methi Malai Chicken
Chicken – 650 Gms (boneless)
Onion -Big 2 nos
Garlic – 5 cloves
Ginger – 1/2 inch length grated
Kasoor Methi leaves -3 tbspns
Full fat milk – 2 cups
Malai / cream – 2 Tablespoons
oil as per requirement
Masalas for marination –
Ginger- garlic paste – 1 tspn each
Turmeric powder -1/4 tspn
Green chilly Paste – 2 nos
Coriander powder -1 tspn
Chicken masala -1 tsp
Black Pepper-1/2 tsp
Salt – as per taste
Marinate chicken for half an hour.
Heat oil in a kadai.
Splutter 1/2 spn mustard seeds
Add marinated chicken stir for some time
Add chopped onions, crushed garlic, ginger and saute well.
Now crush the kasur methi using the hands and add to the pan and saute well.
Add the milk and close the lid for cooking. Cook till the chicken is done.
Finally add cream /malai and cook on very low flame till done
