A traditional meal in Assam has to have our favorite Tenga. A plate of plain rice accompanied with a Maasor Tenga is our comfort soul food .
Recipe:
Ingredients:
Fresh river fish ( rou /katla/carp )- 6-7 pieces ( pan fried)
Tomatoes- 3 medium
Potato- ( boiled) 1 small (optional)
Lemon juice-1-2 tsp
Chopped coriander-1/4th cup
Green chiili-1-2
Tumeric-1 tsp
Salt to taste.
Pinch of sugar
Fenugreek ( methi )seeds 1/4 tsp
Mustard Oil
Method:
Chop the tomatoes and slice the boiled potato.
Heat mustard oil and add the methi seeds.Let the flavors come in but be careful that it does not burn.
Add the chopped tomatoes, potatoes,turmeric,salt and cook till it softens.
Add a cup of hot water and add the fried fish pieces .Let it simmer.
Add lemon juice ( adjust it to the desired sourness) some chopped coriander and one or two green chilli whole with a tiny slit. Cover for a minute, so that the the tenga absorbs the smell of the greens.
Serve with steamed white rice.
