Pitika in Assamese means to mash the roasted or boiled vegetables/ingredients with hand. It is a signature dish of Assamese cuisine.
Recipe:
Ingredients:
1 brinjal/eggplant
5-6 sprigs coriander,finely chopped
1-2 green chillies, finely chopped
¼ medium sized onion, chopped
Pinch of salt
2 tablespoons coarsely ground toasted black sesame seeds
Mustard oil
Method:
Fire roast brinjal/eggplant for about 45 minutes or till it appears cooked. Peel the skin and discard.
Mash the eggplant with coriander, green chillies, onions, salt and black sesame.
Mix and mash with a generous drizzle of mustard oil.
