Dusit Devarana New Delhi offers a transcendental five star luxury experience right in Delhi. Nestled amongst groves of trees and surrounded by beautiful green landscaping, Dusit Devarana is a great urban resort experience, bringing together both modern convenience and timeless natural beauty. Kiyan restaurant is surrounded by a water body giving a feeling of sitting in the lap of nature. It specialises in serving select organic and home grown vegetables and free range meats, which feature in many of the dishes. Open all day, it offers dishes from the Far Eastern, European and Indian cuisines.
We are met by Executive Sous Chef Nishant Choubey who having worked with some of the biggest names in the hospitality, is capable of dishing out some truly nifty stuff. We are soon served with an amuse bouche of twice cooked naval orange. Cooked sous vide, it is melt in the mouth soft, and is enjoyed with the rind. Sundried tomato pates with freshly baked breads remain our constant companion throughout the meal. Next to come is a welcome drink of organic Jamun twist from the trees of the resort. By now the palate is quite in the mood for some good food.
The first starter to arrive is Canadian scallops with cauliflower puree and topped with caviar (Rs 950). These are cooked perfectly. Equally delightful but far spicier is the yam nua salad (Rs 900) with grilled Angus tenderloin and red onion and bird eye chilly. In soups, wild mushroom soup (Rs 550) is served in style. A soup bowl containing some enoki mushrooms and the mushroom soup comes in a tea pot, served right on the table. The truffle shavings that the menu promises are conspicuous by their absence, and the replacement of synthetic truffle oil does not do the trick.
Though the soup tastes good, some truffle would have put it in mushroom heaven! Tom yam goong (Rs 650) has been made fresh resulting in a flavourful broth with plump prawns floating in it. The broth has been kept mild keeping in mind the diners, but I do miss the punch of the soup that is sold in the streets of Bangkok.
After a palate cleanser of homemade wildberry sorbet, we get on to the main course, which is delicious. Atlantic black cod (Rs 2000) with a lemongrass miso emulsion is cooked to perfection, giving the skin a luscious taste. Equally enjoyable is pla neung ma now (Rs 2000) which is steamed Chilean sea bass, served in a broth having bok choy, cilantro, garlic and lemongrass, with some steamed rice on the side. What makes both these dishes mind blowingly delicious are the superb quality of the fish.
Devarana signature toffee pudding (Rs 650) with espresso caramel sauce, orange sesame crisp and crème glacee is a fitting end to a delicious meal.
There are many good reasons to visit Dusit Devarana for a meal. The Hotel environs are lush green, and relax you in no time. The restaurant provides the perfect setting for a cozy meal or even a corporate meeting, giving enough space and privacy for the conversations. And the food that can be memorable. Truly a treat for all senses.
